    How can I use the homemade Whipped Cream?

    The use of whipped cream frosting or homemade whipped cream is endless. Let me share a few options to start with,

    • Top it up on pie - like apple pie, pumpkin pie, chocolate pie and many more.
    • Serve it along with a nice hot pancake or a waffle or a French toast.
    • Load you hot chocolate mug with a generous portion of whipped cream.
    • Enjoy it with any cobblers.
    • Just cut some fresh fruits and top them with some whipped cream and fresh fruit compote.
    • Frost your pastries or layered cake with it.
    • Fill it in your choux pastries.
    • Fill it inside a crepe
    • Use it as a topping for dessert jars like panna cotta, puddings or parfaits.

    Heavy Whipping Cream/Heavy Cream - For perfect results, you should always use heavy whipping cream or heavy cream with high-fat content. The best heavy whipping cream would be the one with about 30% or more fat content. When you use high-fat heavy cream the whipped cream that you get after whipping it up is very stable. It holds shape and can be used for piping. Also, this cream is so stable that it won't melt and stay stable for a long time hence it can also be used for frosting cakes.

    Sugar - I use regular granular sugar for my recipe. It has the best taste and is readily available in the pantry.

    Flavoring extract - You can use any original flavoring extract that the recipe calls for. You are not bound to just vanilla extract.

    Sugar syrup - This ingredient is totally optional. Sugar syrup that is thick gives the whipped cream a nice texture and beautiful gloss. I do not always use it but I like to add it for a nice gloss and texture on certain occasions.

    How to make the Whipped Cream

    Place a steel bowl in the freezer for at least 30 minutes before making the whipped cream. Chilling the bowl helps in maintaining the temperature of heavy cream when you pour it into the bowl for whipping.

    Keep the hand mixer ready with a balloon whisk attachment.

    Take steel or any other material bowl that is bigger than the bowl you placed in the freezer. Fill the bowl with ice cubes.

    Place the bowl from the freezer in the bowl filled with ice and spread the ice on all the sides from the outside of the bowl so it is nicely protected and remains cold while whipping.

    Pour the heavy cream, sugar, vanilla extract, and thick sugar syrup into the bowl.

    Start whipping at a low speed. Keep whisking at a low medium speed till everything mixes together and the cream becomes a little foamy and thick. Do not be tempted to raise the speed at this stage or you will end up spilling the cream everywhere. Also if you start whipping at high speed right from the beginning then you will end up over whipping the cream.

    The heavy cream will take about 2 minutes to reach this foamy thicker texture.

    Once the cream becomes foamy and thick raise the speed to medium or medium-high depending upon the machine you are using. You do not want to set the machine at the highest speed this will destroy the texture of whipped cream.

    On medium-high speed keep whipping the heavy whipping cream for another 3 minutes or till the cream reaches the soft peak stage. Once the cream reaches the stage where it holds shape and sticks to the whisk stop beating or whisking the heavy cream.

    Whisking the cream after that stage would lead to over whipped heavy cream or a curdled messy mixture.

    Fill the whipped cream in a piping bag and decorate your dessert with it.

    • Always use high fat content heavy cream or heavy whipping cream (30% or more fats)
    • Do not whip the cream at very high speed.
    • Once the whipped cream holds shape do not whip it further.
    • Use thick sugar syrup to stabilize or improve the texture of the whipped cream.
    • Use chilled bowl and tools to maintain temperature of the cream.
    • Use ice bowl to keep the heavy cream chilled.
    • Make whipped cream in small batches, maximum 2 cups at a time.
    • Use whipped cream immediately after its whipped up.

    Frequently Asked Questions (FAQs)

    How do I choose heavy whipping cream for whipped cream?

    There is one thumb rule for heavy cream to choose for whipped cream, choose a heavy cream with high-fat content. Normally to get a nice and stable whipped cream you should use at least 30% fat content-based heavy cream.

    So remember the more fat in the cream, the more stable it is for whipping. Whipped cream made with high-fat content-heavy cream holds shape and volume for longer than a low-fat-based heavy cream.

    Every heavy cream packet in the grocery store has fat content mentioned on it. So check the details before buying.

    Is sugar syrup the same as simple syrup?

    No, the sugar syrup used in this recipe is different from the simple syrup used to soak a cake. Simple syrup is much thinner and would add extra water content to the heavy cream which will make the whipped cream runny and not hold shape.

    The sugar syrup I used in this recipe is thicker and gives the whipped cream a smooth glossy finish. You can get sugar syrup like the Torani, Ghirardelli, or Amoretti brands. You will also get different flavored syrups in these brands,

    Can I use confectioners' sugar in the whipped cream?

    Yes, you can always replace sugar in the recipe. I make low sweet version and so the regular granular sugar works for me as I do not add too much of it. However, if you are looking for a sweeter version then definitely use powdered sugar or confectioners sugar. Replace 1 tablespoon of regular granulated sugar with 1.5 tablespoons of confectioners sugar. Adjust the sugar as per taste.

    Confectioner's sugar also helps to stabilize whipped cream and the cream holds its shape and volume for a longer duration.

    How to stabilize a whipped cream?

    Technically, if you use good quality ingredients as per the details mentioned in the recipe and follow the instructions to whip properly you don't need any stabilizers to make a perfect whipped cream.

    However, if you do not have proper ingredients and feel less confident about whipping up the cream then there are certain tips and tricks you can use to stabilize the heavy cream.

    There are multiple ways to stabilize a whipped cream:

    The first way to stabilize a whipped cream is by using Gelatin:

    Take 1 teaspoon gelatin in a microwave-safe bowl and add 4 teaspoons water to it and mix it. Set it aside for a couple of minutes to bloom. Heat the mixture in the microwave for about 10 seconds and stir it after getting it out of the microwave. Set it aside to cool.

    Take a cold bowl, add 1 cup heavy cream, 2 teaspoons granulated sugar, 1 teaspoon vanilla extract and whip it up following the steps mentioned in the recipe box below. Once the cream reaches soft peaks consistency pour the cooled gelatin while simultaneously whipping the cream till it reaches the right consistency. You can use this cream to pipe on any desserts.

    The second method to stabilize is to simply replace 1 tablespoon granulated sugar with 1.5 tablespoons of confectioners sugar. Confectioners sugar has cornstarch in it and that helps in thickening the cream making it easy to whip and much more stable.

    The third method to stabilize the whipped cream is to 1 tablespoon of thick sugar syrup to the heavy whipping cream. Add 1 tablespoon thick sugar syrup, 1.5 tablespoons granulated sugar, 1 teaspoon vanilla extract to 1 cup heavy cream, and whip it up following the original recipe.

    The best part about using sugar syrup to stabilize is that you can use different flavored syrups for desserts as per the requirement. For example, you can use butterscotch syrup for butterscotch cake, caramel syrup for caramel-based dessert, chocolate syrup for chocolate-based dessert, and much more. This is an excellent way to stabilize whipped cream as well as impart flavor to the frosting.

    The fourth method is used to stabilize whipped cream that is more popular for the frosting needed for frosting a cake or any dessert that does not need stirring once set.

    Add 1 tablespoon vanilla pudding mix to the heavy cream along with sugar and vanilla extract before whipping it up. This will yield a super stable whipped cream that should be used immediately to frost or decorate the dessert and let it set to firm up.

    There are a few more methods to stabilize a whipped cream however they also change the flavor and texture of the final product and hence I am not including them.

    Why do we use chilled bowl to make whipped cream?

    The heavy cream whips the best when it is cold. When you pour a chilled cream into a chilled bowl with an ice bowl below it will help maintain the cold temperature of the heavy whipping cream. The chilled bowl will help with the whipping process as chilled utensils keep the fats in the cream chilled and chilled fats fluff up easily and hold shape too. You will get the best volume of whipped cream using this process.

    What happens if you over whip the whipped cream?

    Did you whip the cream for too long? Does it look chunky, split, or deflated and buttery? Do not worry and definitely do not throw it ways. You can fix this. Start the mixer and set it at low speed, slowly drizzle chilled non-whipped heavy cream into the bowl till the broken whipped cream fluffs up and gets to the right texture.

    Do not step away from the machine and focus on getting the cream at the right texture. You might need about 2 to 3 tablespoons of heavy whipping cream to restore the whipped cream in most cases.

    Can you color the Whipped Cream?

    Yes, you can color the whipped cream, just add the gel food coloring right at the beginning before you start whipping. Also do not add too much color, with whipped cream a little goes a long way.

    Equipment

    • 1 Steel Bowl Chilled in fridge Chill at least for 30 minutes in the freezer
    • 1 Bigger bowl than the one in freezer
    • 1 Hand mixer or stand mixer with a balloon whisk attachment

    Ingredients
      

    • 1 cup Heavy whipping cream At least 30% fat content
    • 1.5 tablespoon Granulated sugar
    • 1 tablespoon Thick sugar syrup

    Instructions
     

    • Keep a steel bowl in the freezer to chill for at least 30 minutes.
    • Get the hand mixer or stand mixer ready for whipping with the whisk attachments.
    • In a bigger bowl fill a lot of ice.
    • Keep the bowl from the freezer in the bowl filled with ice cubes.
    • Add 1 cup of heavy cream, 1.5 tablespoons of granulated sugar, 1 tablespoon of thick sugar syrup, and 1 teaspoon of vanilla extract.
    • Start whipping the heavy cream at medium-low speed and whisk it for a couple of minutes till the cream becomes light, foamy, and little thick.
    • After whipping the cream for 2 minutes and it turns a little thick and light, raise the speed to medium-high speed for another 2 to 3 minutes or until the whipped cream becomes thick enough to hold the shape.
    • As soon as the whipping cream reaches this consistency stop whipping or you will end up over whipping the cream.
    • Fill the whipped cream in a piping bag and pipe it onto the dessert of your choice.

    • Always use high-fat content chilled whipping cream.
    • Never over-whip the heavy cream.
    • If you want to make a sweeter whipped cream use confectioner's sugar instead of regular granulated sugar.

    • If you have some whipped cream left then refrigerate it immediately. Whip it up again before using it again.

      whipped cream is delicious but I have always found it hard to make and a bit too unhealthy and heavy on my stomach. I do think I should try your recipe to see if it feels better after. it might totally change my relationship with whipped cream and sweet stuff with it
