Soy-Glazed Salt and Pepper Chicken is a quick, easy and delicious recipe.
It has very few ingredients but is packed with a punch of flavors.
The soy gives it the required saltiness, followed by the umami, sweet taste, and a slight bitterness that balances all the other flavors.

I will also be using sweet soy sauce in this recipe. Sweet soy sauce is a sweetened aromatic sauce that originated in Indonesia.

It is thick in consistency and dark in color due to the addition of palm sugar. This is what will give the soy-glazed salt and pepper chicken the brown glaze it requires and cut the tartness of soy sauce.

Another very important ingredient that I will be using is Sichuan Peppercorns.
Sichuan peppercorns have a unique citrus aroma and the flavor is not hot or pungent like the black or white peppers.
It has a slight lemony tone to it and when you eat it creates a tingling numbness in the mouth setting stage for the spice to kick in.

One more ingredient that is optional but recommended is the Chinese Cooking Wine also known as Shaoxing Wine.
Chinese cooking wine is a rice wine made specifically for cooking. It has a salty and alcoholic flavor and is not for drinking.

Can kids eat food cooked in cooking wine?
Cooking food with wine always puts parents in dilemma, who instinctively never want their kids to consume alcohol.
Adding wine to food while cooking enhances the flavors. Wine is used in marinades, as basting liquid, and even to de-glaze the pan.
If cooked properly the food cooked in wine is perfectly safe for kids.

When you cook food with wine at high temperate the alcohol in the food will evaporate, making the food safe for kids to consume.
In the soy-glazed salt and pepper chicken recipe, I will be cooking the food on high/medium heat in a pan or on a grill so the alcohol will completely evaporate.
However, if you are not comfortable with using a wine you can replace it with chicken stock.

Why use garlic powder in Soy glazed salt and pepper chicken?
Garlic powder gives soy-glazed slat and pepper chicken the perfect garlic flavor enhancing the flavors of the dish.
When you use fresh minced garlic in a recipe that is going to cook in a pan for a long time without any sauces, the garlic starts burning. This gives the dish a burnt garlic flavor which is not what we are looking for.
Garlic powder does not burn and keeps the flavors intact. Also, a small portion goes a long way.


Soy Glazed Salt and Pepper Chicken
Equipment
- Frying Pan / Cast iron pan
- Bowl
- Measuring spoons
- Mortar and Pestle / Grinder
- Spatula
- Parchment Paper (optional)
- Kitchen Towel / Paper Towel
Ingredients
- 4 pieces Boneless Chicken thighs preferably skin on
- ¼ cup Soy Sauce
- 2 teaspoon Sweet Soy Sauce
- 2 tablespoon Chinese Shaoxing Wine Optional replacement Chicken Stock
- ½ teaspoon Garlic Powder
- 1 tablespoon Sichuan Peppercorns
- ½ tablespoon Black Peppercorns
- ½ teaspoon salt
- 1 tablespoon Oil
Instructions
- Ingredients

- Take the chicken in big bowl. Add soy sauce, sweet soy sauce, Chinese cooking wine and garlic powder to it. Coat the chicken properly with it and set aside for 10 - 15 mins.

- Take a pan and toast the Sichuan peppercorns over medium heat till they release a citrusy fragrance. Then transfer them to the Mortar to cool.

- Once cooled add the black peppercorns to it and grind it to a fine powder. Take it out in a small bowl, mix the sea salt in it and keep it aside. You will not need all of it.

- Take the marinated chicken out on a paper towel to remove some of moisture. This will avoid burning of marinade while grilling. Let it rest for few mins.

- Now heat a non stick pan or a cast iron pan over medium heat. Drizzle some oil on the pan. Place the chicken on the pan and let it cook.
- To get even cooking and browning you can put a parchment paper on top of the chicken and place another pan on it. This will press the chicken down. Cook it on medium low heat.
- Once the chicken is perfectly cooked or browned from one side flip it over and following the same process to cook the other side.
- Take the cooked chicken on a plate and sprinkle some of the ground pepper mix on it. Season it as per your taste and serve it with some salad and lemon.

Notes
- Its best to use thigh piece of chicken.
- Using the chicken with skin on will give crisp texture and even browning.
- If you do not have Sichuan peppers you can just use black peppers
- do not cover the pan with tight lid and cook, the moisture needs to evaporate to get perfect texture.
- If there is a splatter while cooking you can cover the chicken with parchment paper. This will stop the splatter as well as let the moisture evaporate.
- If you do not want to use cooking wine you can use chicken stock. But the flavor will be different.
