These rich and fudgy Chocolate Crinkle Cookies are my absolute favorite holiday treats.
The classic Chocolate Crinkle Cookies are not just fun to make but are also super delicious, decadently rich, chocolatey, and perfect for holidays.

These cookies are different from the other regular cookies. Though they look like cookies, they are a lot like brownies or that yummy chocolate cake. Little crisp from the outside and soft and fudgy from the inside.

Another really good reason to bake these cookies is that they are low on calories. Each cookie is 86 - 88 calories. A perfect cookie in the sea of other calorie-filled Christmas treats.

What's so special about these Rich Fudgy Chocolate Crinkle cookies?
I have a sweet tooth especially for anything that has rich chocolate in it. But I am also lactose intolerant, which indirectly takes away most of the cookies option from my plater. But guess what this is dairy-free or lactose-free, so I can indulge in it, thus making them my go-to cookies when I am craving something rich and chocolatey.

And I am definitely not joking when I say they are super easy to make. My 10 years old son makes it without any help. In fact, he feels super proud that he can make them independently.

Lets talk about the Ingredients for Chocolate Crinkle Cookies.
Cocoa: It's always best to use Dutch-processed cocoa to get the rich chocolatey flavor and color in your cookies. Dutch-processed cocoa is less acidic, darker gives the cookies a nice fudgier texture.
Eggs: Always use eggs at room temperature. Cold eggs won't impact the taste of the cookies or make them look horrible, however, room-temperature eggs will help you get fluffier cookies.
Vanilla Extract: Always use the best quality extract. Use natural vanilla extract instead of artificial versions.

Why should you refrigerate the dough overnight?
The cookie dough is too sticky at room temperature and so very difficult to roll. Chilling the mixture takes away that sticky texture so you can roll the balls much easier.
Another reason to refrigerate it is so that the mixture comes together and hardens thus giving you nice brownie texture cookies.

Rich Fudgy Chocolate Crinkle Cookies
Equipment
- Stand Mixer / Hand Mixer
- Paddle attachment / mixer blade
- Scraper / spatula
- Ice cream scoop / table spoon
- Measuring spoons
- measuring cups
- baking tray
- Parchment sheet
- Bowls
Ingredients
- 1 cup Cocoa powder Dutch / dark
- 4 Large Eggs Room temperature
- ½ cup Vegetable Oil / Olive oil
- 1 ¾ cups Granular sugar White
- 2 teaspoon Vanilla extract
- 2 teaspoon Baking powder
- 2 cups All purpose flour
- 1 teaspoon Espresso powder / instant coffee powder optional
- ¾ teaspoon Salt
- 1 cup Powdered sugar / confectioner's sugar
Instructions
- Ingredients

- Take a big bowl and sift the flour, salt and baking powder. Then mix it all together once to combine it well.


- In a mixing bowl add the granular sugar and oil and mix / beat it together using the paddle attachment / mixer attachment. Scrape the bowl in between and beat again.


- Scrape the bowl down and add cocoa powder. Beat it together until well combined, scrapping it at regular intervals. If you are using espresso powder then this is a good time to add it.

- Add eggs and vanilla extract and mix it together.

- Add the all purpose flour to the mixture and mix it well scraping in between till everything is well combined.

- Either transfer the dough to an air tight container or cover it bowl with a tight cling wrap and refrigerate it overnight.

- Pre-heat the oven at 350F and line the baking tray with parchment / baking paper.
- Roll the chilled dough into small bowls using the small ice cream or cookie scoop or a table spoon.
- Roll all the balls in the powdered sugar.

- Place the sugar covered ball on a parchment lined baking tray about 2 inch distance from each other.
- Bake for 10 to 12 mins. The cookies will rise and develop some beautiful cracks.

- The hot cookies will be too soft and easily breakable. Let them cool for an hour and they will change the texture.

- Once cooled the outside of the cookie will be slightly crisp and the inside would be soft and fudgy.

Notes
- Always measure your ingredients correctly. Do not hard press the flour in the measuring cup. This will lead to extra flour and denser cookies.
- Let the dough refrigerate for at least 8 - 12 hrs.
