Paneer fried rice is a recipe I created for my son. He loves fried rice but in that dish, he doesn't get all his favorite ingredients. He loves paneer and nowadays he would be happy if I added it to every dish I make.

I had no idea how it would turn out as for years I have had fried rice and could not imagine putting corn and paneer in it. But alas that was the only way he wanted to eat it. So keeping the Chinese flavors intact I incorporated his favorite ingredients like paneer and sweet corn. Surprisingly it turns out so yummy.

It's a very simple recipe that doesn't require any more explanations. So let us get down to the recipe


Paneer Fried Rice
Equipment
- Stock pot / big sauce pan
- Wok / kadai / saute pan
- Spatula
- Strainer
- Measuring spoons
Ingredients
- 4 cups Cooked rice
- ¾ cup Cubed paneer
- 1 Carrot Finely chopped
- ½ cup Sweet corns
- 1 Capsicum (medium sized) Finely chopped
- ¼ cup French beans chopped
- ¼ cup Spring onions finely chopped (set 2 tablespoon aside to add in the end)
- Salt
- ¼ teaspoon black pepper powder
- 1 teaspoon Sugar
- 1.5 tablespoon Soy sauce
- 1.5 tablespoon Red Chili sauce
- 5 pods Garlic finely chopped
- 1-2 pieces Star anise
- 2 tablespoon oil
Instructions
- Ingredients

- Take a stock pot or big vessel with water, salt and oil and bring it to boil. Add soaked rice to it, cook it till the rice is cooked 95% and then strain it.
- Take a kadai/wok/saute pan and add oil. To the hot oil add star anise and chopped garlic, cook it for 1 min or till it browns slightly.
- Add all the chopped vegetables and saute it for 2 mins. Then add the paneer and cook for another minute.
- Add sugar, salt, black pepper powder, red chili sauce and soy sauce and stir it in. Cook for couple of minutes then add 3 tablespoon water and let it cook for another minute.
- Add the cooked rice, mix it well, cook for another 2-3 minutes and finally add the remaining 2 tablespoon spring onion. Serve it hot and enjoy.
Notes
- If you like spicy food you can add one green chilli finely chopped along with garlic.
- You can change ratios of vegetables, however do not skip adding capsicum/ green bell pepper as it gives the rice the flavor it requires.
- In the end you can add smoked flavor to the rice as it gives it a nice earthy feel. Place a small bowl on top of the rice and keep a hot coal in it, pour a teaspoon of ghee on top and close the lid. Let it smoke for 5 mins.
