Baked Vegetables in White Sauce is a rich creamy dish of vegetables cooked in cheesy white sauce. Baked Vegetables in White Sauce is one of those beautiful one pot Continental dishes which you can devour just by itself.
Baked Vegetables in White Sauce was one of the first baked savory dishes I ever made. Back in those days when I was in college my dad got us our first convection microwave. Me and my mom became the curious food explorers, trying out various recipes that can be cooked in the fascinating gadget.

After baking few cakes and roasting some fish and chicken we came across the recipe for Baked Vegetables in White Sauce in the user manual. Curious to try something new, we both ventured into making this exotic dish.
In those days the exotic vegetables were not that easily available. I remember going to a special market about an hour away from our place to find the baby corns, red and yellow peppers, broccoli and of course mushrooms.

The first time we made Baked Vegetables in White Sauce it was a huge hit. It became a delicacy that we would cook on a special occasion.
Now a days all these ingredients are easily available, however with passing years and some experimentation I started using other available veggies too.
It is also a good way to feed some healthy veggies to kids.

What vegetables should you add in Baked Vegetables in White Sauce?
The best combination of vegetables that compliment each others flavors and enhance this dish are, sweet corns, carrots, broccoli, green bell peppers / capsicum, French beans, green peas and mushrooms.
While the sweet corn, carrots and green peas give it a light sweet touch, the capsicum balances a mild spice while mushrooms and broccoli add a nice texture to the dish.

Of course you need not stick to these vegetables, you can switch veggies as per your preference. Some people do not like broccoli or mushrooms so its perfectly fine to skip it or replace it with some other veggies.
However be careful not to add something too mushy to the dish as it messes up the texture. Personally I don't like cauliflower or squash in this dish as they have a distinct taste and smell that overpowers other vegetables.
But feel free to experiment and create your own unique Baked Vegetables in White Sauce.

What is a white sauce?
White sauce is also popularly known as Béchamel sauce and is made from all-purpose flour, butter and milk. It is made by making roux of butter and all purpose flour and adding milk to it.
Now if you are thinking what is a roux, then it is essentially fat and flour cooked together in equal parts and is used to thicken any sauces.
But in this recipe we are not using the typical Béchamel sauce. We are also adding a good amount for cheese to it to make it cheesy. You can skip this part if you are not fond of cheese but adding cheese gives it a thickness, flavor and lifts the richness of recipe.

Why do you add nutmeg to the white sauce?
Nutmeg provides a exotic, vibrant and aromatic touch to the sauce and has been an integral part of traditional white sauce. If you find the flavor too overpowering you can skip it.

Why to use Processed Cheese?
There are two main difference between natural cheese and processed cheese in relevance to Whey and Emulsifier. Natural Cheese has Whey pressed out in the process of making cheese while Processed Cheese does not. Also Processed Cheese has Emulsifier that help to keep the fatty and non fatty ingredients mixed together. Thus even after heating the sauce it will not split or become stringy. You will have a smooth, silky and rich sauce.

Can you make Baked vegetables in white sauce without cheese?
Yes, you can make this recipe without cheese. However if you are skipping cheese then you need to reduce the quantity of milk you add to the sauce. Otherwise you will end up with a runny white sauce.
Also if you are skipping cheese layer on the top, you can instead add a thin layer of bread crumbs. This will give a crisp well browned layer on the top.

Baked Vegetables in White Sauce
Equipment
- Oven / OTG / Convection Microwave
- Sauté Pan / Fry Pan / Wok / Kadhai
- Sauce Pan
- Spatula
- Whisk
- Grater (optional)
- Baking Dish
Ingredients
White Sauce
- 3 tablespoon Butter
- 3 tablespoon All-Purpose flour / Maida / Whole Wheat flour
- 2 cups Milk Preferably whole milk
- ⅛ teaspoon Nutmeg Powder optional
- ¼ teaspoon Black Pepper Powder
- Salt as per taste
- ¼ teaspoon Sugar
- 120 gm Grated Processed Cheese (1 cup) (if you are using amul cheese then 5 cubes of cheese)
Baked Vegetables
- ½ cup Capsicum diced
- ½ cup Mushrooms sliced (optional)
- ½ cup Carrots Diced and blanched
- ½ cup broccoli blanched
- ½ cup Sweet corn blanched
- ½ cup Green peas or sweet peas blanched
- ½ cup French beans diced and blanched
- 1 tablespoon Oil preferably Olive oil
- ¼ teaspoon Black pepper
- 1.5 teaspoon Red chili flakes
- 1 teaspoon Oregano or Italian herb mix
- 120 gm Grated Processed cheese (about 1-1.5 cup) 6 cubes of Amul cheese
Instructions
Making White Sauce
- Take a pan and add butter to it.
- After butter melts a little, add the all-purpose flour / maida and stir and cook it till its slightly changes color and you get a nice roasting smell. Cook this on medium low flame to avoid burning.
- Now reduce the flame to low and gradually add milk to it, stirring continuously using a whisk.
- Once you have added all the milk turn the flame to medium heat and keep on stirring till the sauce begins to thicken.
- Add nutmeg powder, black pepper, salt and sugar and mix it in.
- Add grated processed cheese to the white sauce / béchamel sauce and keep on mixing till all the cheese melts and is well combined. Once the sauce is smooth and silky, switch off the gas and set it aside for later.

Baked Vegetables in White Sauce
- Ingredients

- Preheat the oven at 400 F / 205 C.
- Heat up a sauté pan / wok / kadhai on a medium heat and add oil to it. To the oil add the capsicum and cook it for a minute.
- Add the remaining blanched vegetables, chili flakes, salt, pepper and herbs and sauté it for 3-4 minutes.

- Add the white sauce to it and mix it well. Cook it for couple of minutes.

- Transfer the vegetables with white sauce to the baking dish and sprinkle the grated cheese on top to form an even layer and all the veggies are covered with the cheese. So if you take big or wide baking dish then you will need more cheese to cover veggies.
- Bake for about 15 - 20 mins or till the top is golden browned. Each oven heats up differently so its best to check at 10 mins and then bake it further if required.

- Serve the baked vegetables in white sauce with garlic bread or eat it just by itself.

Notes
- If you skip adding cheese to the white sauce then reduce the milk in the sauce. Use 1.5 cups of milk to have a good consistency sauce.
- Preferably use a oven safe glass or ceramic bowl / pan for this recipe.
- Do not over cook the white sauce or it will be too thick for this recipe.
- In case the sauce turn thick add milk gradually to it till it you you get right consistency.
- Always blanch the veggies for this recipe to get good taste and texture.
- You can add more chili flakes if you want to increase the spice level.
