Summer is always such a nice time for barbecue or grilling. I love cooking on grill while enjoying the outside weather.
Grilling chicken, fish or veggies and enjoying the fresh flavors is always satisfying.

My husband absolutely loves Butter Chicken. I could serve it to him seven days a week and still on the eighth day he would ask for the same.
That is what led me to think that if I could incorporate the flavor of butter chicken in barbecue and enjoy it for our outdoor parties.

Butter chicken tikka have all the same flavors of a regular butter chicken and still has its own distinct feel.
Grilling it over natural charcoal gives it an earthy, smoky flavor.
All the flavors come out so beautifully that you would keep coming back for more.

The preparation is very simple and can be made a day before.
There are a few key requirements for a very good grilled tikka. Firstly you need to thinly slice the chicken and secondly marinate the chicken at least a night before.
If you do not have a barbecue or a grill, you could easily do it on a griddle.

To get the smoked flavor in the chicken cooked on a griddle you should smoke it with charcoal for about 10 mins before cooking.
Vegetables like onion, green bell peppers, and tomatoes pair very well with it.

Butter Chicken Tikka
Equipment
- Barbecue / Grill / Skillet / Tava
- Bowl
- Skewers
- Chopping board
- Knife
- Measuring spoons / Cups
- Small steel bowl / Vati
- Lid for bowl
Ingredients
- 500 Gm Boneless Chicken
- 1.5 tablespoon oil
- 1 tablespoon Coriander powder
- 1 tablespoon Cumin powder
- 1 tablespoon Red chili powder
- 1 teaspoon Amchur powder
- ½ teaspoon Garam masala
- 2 tablespoon Cashew paste
- 1 tablespoon Ginger garlic paste
- 2 tablespoon Fresh cream
- 2 tablespoon Tomato paste
- 1 teaspoon Sugar
- 1 teaspoon Crushed Kasuri methi
- ¼ cup hung curd
- 1 tablespoon Roasted besan
- 1 cup Onion big squares
- 1 Tomatoes big cubes
- 1 cup Capsicum big squares
- 1 Jalapeno big pieces
- 1 teaspoon Ghee
- 1 piece Charcoal
- 2 tablespoon Butter
Instructions
Marinate
- Ingredients

- Take a big bowl and add oil, cumin powder, coriander powder, red chili powder, amchur and garam masala and mix well.
- Then add cashew paste, ginger garlic paste, fresh cream, tomato paste, salt and sugar. Mix everything well.
- Now add kasuri methi, hung curd and roasted besan and mix everything till well combined.
- To this marinade add chicken, tomatoes, onions, capsicum and jalapenos. Coat all of them properly with the marinade.
- Let the chicken marinate for at least an hour or preferably overnight. This will make the chicken soft and juicy.
Smoking the chicken
- Heat the charcoal over the gas flame.
- Make a small pit in the center of the chicken and put a small steel bowl. Put the heated charcoal in it and pour a teaspoon of ghee on top of it.
- Cover the bowl with a plate or lid and let it smoke for 10 to 15 mins. Then take the charcoal out and cover the bowl again and set it aside.
Prepping the skewers
- If you are using wooden skewers, soak them in water for couple of hours. This will stop the skewers from burning while grilling.
- On the skewers arrange the vegetables and chicken.
Barbecue /Grilling
- Heat up the barbecue machine till it reaches 400 F.
- Then arrange the chicken skewers on the grilling plate or grilling mat and let it cook.
- If you are doing it on griddle, heat up the griddle and brush it lightly with butter.
- Place the skewers on it and let it cook.
- For both the barbecue as well as griddle keep turning the chicken on all the side to cook evenly and perfectly charred.
- Serve them hot with a drizzle of butter, heavy cream, onion and a mint chutney for accompaniment.
Notes
- For best results marinate the chicken a day before.
- You can replace cashew paste with magaz paste.
- Do not forget to soak the skewers at least an hour before stacking them with chicken to avoid burning of skewers while grilling.
- You can replace tomato paste with tomato puree.
