What I love about Passion fruit Panna Cotta with mango jelly?
I love the combination of passion fruit with mango. It is such a unique and beautiful blend of flavors. It is a perfect balance of sweet and tangy, the tangy taste of passion fruit gives you a burst of flavors and the sweet mango jelly cuts down on the tartness. What is a Panna Cotta?
Panna Cotta literally means cooked cream. It is an Italian dessert with delicate sweetness, smooth texture, and an elegant presentation.
It is made using very few ingredients and is a simple mixture of cream, sugar, and flavoring. Gelatin is added to this mixture to change the consistency and set it into desired shape or mold. Once set the final product is rich and silky smooth.
And a fun fact about Panna Cotta is that it looks and tastes very fancy but in reality, it's one of the easiest and quickest desserts to make.

I love making such mini desserts for parties. They are easy to serve and can be made in advance giving you one less thing to worry about at the last minute. Some of my favorites include Cadbury chocolate panna cotta and New York-style mini cheesecake.

What is gelatin and why do we use it in Passion fruit Panna Cotta?
Gelatin is made of tiny granules that have no flavor or color of their own. You either get it as a powder or as sheets.
It is used as a thickening agent while cooking Passion Fruit Panna Cotta with Mango jelly. Gelatin powder is sprinkled over cold water and set to bloom before adding it to the hot cream and sugar mixture.
That gets me to one of the most asked questions.
Can we skip gelatin in the panna cotta recipe?
The answer is no, you cannot skip the gelatin in the panna cotta recipe as it is the gelatin that helps the panna cotta to set.
This brings us to another very important and relevant question and concern for the VEGAN or VEGETARIAN population.

Can you replace Gelatin in the Panna Cotta recipe?
The answer is yes!! Of course Yes! there is a replacement for Gelatin in the Passion fruit panna cotta recipe.
You can replace Gelatin with Agar Agar in this recipe if you are looking for a Vegan or vegetarian option.
How to replace Gelatin with Agar Agar?
Normally, you can replace Gelatin powder with Agar-agar powder in a 1:1 ratio. That would mean you can replace 1 teaspoon gelatin powder with 1 teaspoon of agar-agar powder. However, if you are using agar agar flakes then you need to replace 1 teaspoon gelatin powder with 1 tablespoon of agar agar flakes.
So don't worry my Vegan and Vegetarian friends, you can enjoy this creamy, decadent and luscious Passion fruit Panna Cotta without worrying about the Gelatin content.

Step by Step instruction for Passion fruit panna cotta with mango jelly:

- Firstly take a small glass bowl with 4 tablespoons of cold water. Sprinkle the Gelatin on top of it and let all of it incorporate with water.

- Now set this bowl aside for the gelatin to bloom for about 10 to 12 minutes. Check if any powder is left on top that is not able to bloom. If there is any dry powder left then sprinkle a little water on it.



- Take a saucepan and add Milk, Heavy cream, and Sugar to it. Heat the mixture on medium heat/flame. Keep string the mixture at regular intervals to avoid burning the bottom. This will also help dissolve the sugar.
- Heat the mixture till all the sugar is dissolved and tiny bubbles appear at the rim of the liquid. Shut the heat off immediately. We do not want the liquid to boil over. Just make it hot enough to dissolve the sugar and incorporate it well with milk and cream.
- Once off the heat add the passion fruit pulp or passion fruit puree to the liquid and stir it in.



- Add the bloomed gelatin to the mixture when it is still hot and stir it till everything dissolves.

- Pour the liquid mixture into the shooter, glasses, or molds and keep it in the refrigerator to chill and set for at least 4 to 5 hours or overnight.

- Once the passion fruit panna cotta layer is set we can work on making the mango jelly or mango compote.

- Again take a small bowl with cold water and sprinkle the gelatin on top of it. Set it aside to bloom for at least 10 minutes.
- Take a saucepan and heat up the Mango pulp, water, and sugar on medium heat. Heat it until the sugar dissolves.
- Once you turn off the heat, add the bloomed gelatin to it and stir it till everything dissolves. Remember the pulp needs to be hot when you add the gelatin but the heat needs to be turned off.
- Let it cool for 10 minutes.
- Top the passion fruit panna cotta glasses with 2-3 tablespoons of mango jelly/compote each. Refrigerate the glasses again for 3 to 4 hours or till the jelly sets.

- Once ready you can serve the panna cotta to the guests and enjoy the beautiful dessert together.
Some FAQ's for Passion Fruit Panna Cotta:
Can you make Passion Fruit Panna Cotta Ahead of time?
Yes!! Panna cotta can be made in advance so that you have one less thing to worry about at the time of the party. You can use small glass shooters or even disposable shooters that you get nowadays.

What if the Panna Cotta liquid boils?
While heating up the heavy cream, milk, and sugar mixture if the liquid boils over then do not worry. The reason we don't want the milk to boil over is that then the temperature of the liquid would be too high to add the gelatin.
In case heavy cream and milk boil over, let it cool for 5 minutes till it is cool enough to add the gelatin and melt it to blend properly. Remember the liquid needs to be hot but not boiling hot for the gelatin to work its magic.

Can I just put mango compote without gelatin on top of the Passion fruit panna cotta?
Yes, you can always put just compote on top of passion fruit panna cotta instead of setting it with gelatin. It will change the texture and look of the dish but not compromise on flavors.
How to extract the pure from passion fruit?
Firstly cut the passion fruit into halves. Now scoop the inside of passion fruit and transfer it to a sieve. Using a spoon or spatula sieve the pulp through it and throw away the seeds. Taste the pulp for tanginess before using. This will help you in adjusting the proportions in the recipe.
What do I do if I cant find passion fruit?
If you are not able to find passion fruit then you can use passion fruit puree or pulp available in the market or on amazon.

You can also try some other easy and delicious desserts like Sweet corn basundi, Kaju katli, Eggless chocolate cake with chocolate ganache or Mawa barfi.

Equipment

Ingredients
Passion Fruit Panna Cotta base
- 300 ml Heavy Cream
- 100 ml Milk Full fat
- 80 gm Sugar Granular
- 2 teaspoon Gelatin powder
- 2 tablespoon Passion fruit puree/pulp
- 4 tablespoon Water Cold
Mango Compote
- 150 gm Mango pulp
- 2 tablespoon Water
- 1 tablespoon Sugar
- ½ teaspoon Gelatin 2 gm
Instructions
Step for making passion fruit panna cotta base
- Cut to passion fruit and scoop the pulp from inside it. Using a sieve strain the pulp. Discard the seeds and keep the pulp.
- You can skip this step if you are using a store-bought puree.
- Take a small bowl with 4 tablespoon cold water and sprinkle 2 teaspoon gelatin powder over it. Set it aside and let it bloom for about 10 to 12 minutes.
- In a saucepan take 300 ml heavy cream, 100 ml milk, and 80 gm sugar. Place the pan on medium heat and cook the mixture till the sugar dissolves.
- Stir it at regular intervals to avoid burning at the bottom. Switch off the heat as soon as the sugar dissolves and you see some tiny bubbles at the rim of the liquid.
- Take the pan off the heat and add 2 tablespoon of passion fruit puree/pulp. Stir the mixture until well incorporated.
- Now add the bloomed gelatin and mix it together. keep stirring till all the gelatin is dissolved.
- Pour this mixture into the glass or shooters and keep it in the refrigerator to chill for 3 to 4 hours.
- Once the passion fruit panna cotta is set start the prep for the topping.
Step for Mango jelly
- Take a bowl with 1 tablespoon cold water and sprinkle ½ teaspoon gelatin over it. Set it aside to bloom for 10 to 12 minutes
- Take a saucepan and add 150 ml mango pulp, 2 tablespoon water, and 1 tablespoon sugar.
- Heat the mixture on medium flame till the sugar is dissolved.
- Take it off the heat and add the gelatin that we had set aside to bloom. Stir it all well so that the gelatin dissolves into the pulp mixture.
- Let this pulp cool for 5 to 10 minutes.
- Take the panna cotta glasses out of the fridge and pour 2 to 3 tablespoons of the pulp in each glass.
- Put it back in the fridge to set and chill for about an hour or till the jelly sets.
- Serve this amazing and delicious dessert to your guests and enjoy it together.
Notes
- Do not boil the Heavy cream and milk, just heat it enough to dissolve the sugar.
- If you don't find passion fruit then use the passion fruit pulp available in-store or on amazon.
- You can skip adding gelatin to the mango jelly and serve it as a compote.
- Do not pour a hot mango compote on to of the set passion fruit panna cotta. This will melt the top layer and mess up with the clean elegant look.
- Don't be tempted to add too much mango jelly as that will turn the dessert too sweet.
